Without the "mute" option, would students be able to actually view when I am in the process of commenting and grading their papers?

My question still remains whether students would be able to view my

Yes, whenever the assignment's gradebook column shows Manually as the grade posting policy, you can be sure students won't view grades and comments. From the Canvas Instructor Guide page Robbie linked:
If you select a manual posting policy, grades will be hidden by default and will remain hidden until you have posted grades for the assignment.
