Once an assignment is posted to canvas, is there away to view it, to see that it was actually done?

Hi  @muellree23  Welcome to the Canvas Community!

Yes, when you go back to the assignment page, you should see confirmation that you have submitted the assignment.

How do I upload a file as an assignment submission in Canvas? 

In this case the file name was called assignment.docx and you can download it by clicking on the link. And you can click on Submission Details to see more information.
