Users can configure their time zone based upon where they live...so I believe that Canvas will calculate when assignments are due based on their time zone if you live in a different time zone than your students do. I'm not exactly sure what you mean, but I'll take a guess that you are asking about time zones? If so, there are a few things that I can tell you:
Canvas administrators at your school can set a default time zone for the entire Canvas account. More than likely, this has already been set for your school's Canvas environment. How do I set details for an account?
You can set a time zone for a course following the information in this Guide: How do I set a time zone for a course?. The default time zone is based off of the time zone set at the account level (my first bullet point).
All Canvas users can set their own time zone depending on where they live (see the information in the blue boxed areas):
