Can I UN-publish a quiz after I have published it? I published a quiz to see it from the student side, now I want to unpublish it before the course begins.

If not students have accessed the quiz and you have reset the student view in the quiz, you should be able to unpublish the quiz. The key here is that you may have to reset the student view since you accessed the quiz in Student View:
