I'd like to find some way of knowing whether students have read an email announcement I've sent through Canvas (for a project I am working on). Is there any way to do this?
Is your message an actual announcement or a message sent through the Canvas inbox? If it's an announcement then you could require students to comment to the announcement that they read it. If it's a message through the Canvas inbox then the best you can do is ask the students to reply to you that they read the message.
Bridgette, Kona Jones's recommendation should accomplish what you need. Many community members have debated the pros and cons of having a feature that shows when a student has "read" a message or other content item, but ultimately, in order to know that the student has actually read and comprehended the item in question they must substantively reply. If you decide to go the announcement route, make sure that the announcement you use for this purpose is set to accept replies (refer to How do I use the Announcements Index Page?), and also double-check that the global setting to disable comments on announcements has not been enabled (see How do I disable comments on announcements in a course?).
