How can I copy and paste an assignment for a TEXT ENTRY assignment?
Demarcus, as Chris Hofer has advised, highlighting the text you want to copy and using Ctrl+C (copy) and Ctrl+V (paste) is how you'd copy and paste text from one source into the text entry box when you're using a Windows desktop machine or laptop. If you're on a Mac, you'd highlight the text and use the Command ⌘ key: CMD+C to copy it, and CMD+V to paste it into the text entry box in Canvas.
If you're on a desktop or laptop, you can also drag your mouse cursor over the content you wish to copy to highlight it, right-click on it, select Copy, then right-click in the text entry box Canvas, and click Paste.
In addition, copying and pasting from a Word document, and from some other outside sources as well, can result in some strange formatting in your text entry box. I tell my students who are going to cut and paste from elsewhere to use the Remove Formatting button on the Rich Content Editor or RCE (the first screenshot calls it the "RTE"):

After you've removed the formatting of your copied-and-pasted text entry, you can then reformat it as you wish using the tools in the RCE.

Are you copying/pasting text from a Word document into the assignment submission area of your course? If so, you can use Ctrl+C (Copy) and Ctrl+V (Paste) to do this. Hope this helps!!!
