Does canvas store all of the classes you've ever taken? Or does canvas clear out every time you start a new semester?

Like Robbie said, the answer is going to depend on where you are using Canvas. If you are at an institution that is a cloud Canvas customer, if and when courses get concluded or deleted is going to but up to the policy of that institution. Many institutions will conclude courses according to their academic calendar and delete concluded courses at some future date after they are concluded. If you are using Canvas Free-For-Teachers your course will never be deleted automatically although you have the option to conclude or delete your own courses as a teacher. Some other groups will run an open source version of Canvas on their own servers and so would also set their own policies for when courses are deleted.
The answer to that question really depends on it you are asking about Free for Teacher Canvas or your institution's pay for and supported version of Canvas. At my institution courses are only officially kept on the system for 2 years and 1 week past the end of the semester they are taught in. This is an institutional policy though, not a Canvas policy.
