Do I need to configure anything on my Windows server for the Canvas IOS app to work?
John Johnson, can you clarify your question and what you're trying to accomplish? Are you downloading the Canvas for iOS app on an iPad or iPhone and then trying to log in to your Canvas instance? You'll find tons of guidance about the Canvas for iOS app here: Canvas by Instructure iOS Guide
I've installed the Canvas for IOS onto an iPad and after I select my domain
it never gives me a logon box, the screen goes black. I can access Canvas
form a browser on the same iPad.

Thanks for clarifying your question, John. I haven't run into that, but I'm going to share your question with a few people who might be able to help. In the meantime you might try soft-closing the app (double-press Home button, swipe up on Canvas App, press Home button), then relaunch the app to try again.
Exactly what has happened to us too. Have posted a ticket to canvas.

Therefore it looks to be an issue specifically to either iOS, or the iOS app on our network and ADFS(office 365) authentication.
We’ll keep having a look, but hopefully Canvas can point us in the right direction as to what is different about the android app to the iOS app when it tries to bring up the office 365 log in page.
As a further update, students can download and log into the App at home and provided they don't log off, can use it in school. That is until it comes to using the Quizzes when all they get is a blank page! Further report to Support but I am facing having to tell the students not to use the App which is a real shame as the new PDF editing feature is mighty fine.
Hoping for a fix...

Using the browser version of Canvas on an iPad has a number of unexplained, unresolved and above all frustrating issues:
We have not been able to find a pattern for these. Not linked to iOS version, browser etc
None of these has been experienced when using Windows.
