Matt, the gradebook can absolutely display the final grade as both a percentage and a letter grade. Here's a little snippet of what the Total column of one of my gradebooks looks like:
Students see this as well in their Grades tab.
I accomplished this by applying a grading scheme to the final grade in the course settings. This is the grading scheme I use:
Yours will, of course, depend on your letter grade policy.

Has something changed in Canvas that prevents the letter grade from appearing in the CSV download?
I could not get the letter grade to download in the CSV.
Canvas Support confirmed that only percentages and scores can be downloaded, not letter grades.
Maybe I am missing some hack?
Daniel, nothing has changed since my last post. I just tested it again in a different course. I enabled a letter grading scheme in course Settings, and exported the Gradebook to a CSV file. The letter grades appeared in two separate columns in the CSV (Current Grade and Final Grade), just as they have in the past. I'm not clear on why Canvas Support said that letter grades cannot be downloaded; the process was straightforward, with no hack involved.

Thanks for the quick reply Stefanie! I'd never seen that setting before, and for the life of me couldn't find it mentioned anywhere.
I would like to point out that if you click the "Print Grades" button, that it will NOT include the letter grade in the print out even with a grading scheme applied to the course. We have to manually add it to all of our print outs.
Canvas Admin, I confess that I am not familiar with the "Print Grades" button (I try not to print anything at all, as you can readily tell from my Paper Pumpkin: The Under 10 Club. blog), but the letter grade does display in the .csv download of the Gradebook, and also shows up quite nicely in the Individual View of the Gradebook.
Stefanie Sanders, I should have been more precise and put print in quotation marks. We "print" our grade reports to PDFs, so no paper or tress are harmed in the making of the student's grade report.
