Looking into this for a faculty member.
Does anyone know if any parts of Canvas (particularly discussions) track student edits? We could use this in the lab to make certain they aren't changing data.
It's actually for this reason that we strongly recommend that faculty not allow students to edit their posts. You lose the record of what was originally said.
In Discussion settings you have the ability to prevent students from editing or deleting posts:

As for tracking, there is nothing in the course that tracks the changes, but Admins can see page views and can see when student make changes to certain items.
