When signing students up I did not use the format of "Student name" <email> and simply typed in students' emails. I now have their emails showing as their names.

Assuming that you have admin rights to the back-end of your school's Canvas instance, student details can be edited by following the steps outlined in this Canvas Guide: How do I edit a user's name, time zone, or email in an account?

In addition to Chris's answer, you may need to contact your eLearning Department (or equivalent) at your school to get those names changed or remove the students from your course and start over.
One other scenario, if the students you added did not have accounts already created in Canvas, the way you added them will email an invitation and allow the student to set up their passwords.
