Un-publishing an old quiz even thought it says 'student submissions'
Gary, do you have student submissions in the quiz? If so, then no, you can't unpublish the quiz. You could remove it from your Course Modules and hide the link to Quizzes, but ultimately the student could still access the quiz from their Grades. Is there a reason you are trying to unpublish it? Depending on what you're trying to do, there might be another way to accomplish it.
If you don't have student submissions in the quiz then you could contact Canvas Support (Help link --> Report a Problem) and see if they can help you get it unpublished.

Thanks for the quick response.
I have two quizzes which I had set up as 'preliminary practice quizzes' as
we were getting set up in Canvas.
Eventually, as we felt comfortable with Canvas we set up standard quizzes
and have been working just fine.
I'd like to access the material on the two quizzes and as such keep it
unpublished. The students have completed the course already.

Gary, as both Kona Jones and the Canvas Guide (How do I use Draft State in Quizzes?) state, "Quizzes with student submissions cannot be unpublished." This is true even in past courses that students have completed, presumably in order to preserve the integrity of the data. If you need to access the material, you could export the quizzes-- How do I export quiz content from my course?--and then import them into any course shell you can use for ready reference.
