Does anyone know about to avoid losing student assignment submissions, rubric marking and speedgrader feedback when a student changes course?

Hi Jenna,
Depending on how your integration is setup and what status it puts the student in upon the student dropping from one course section and being enrolled into another, you can still see the student submissions and rubrics markings. To do so you will have to go into the gradebook and tell the gradebook to show inactive enrollment and/or concluded enrollment. Here is the documentation on how you can do this in the gradebook.
