Hello,
As a student, I know I can go into my canvas calendar and "uncheck" a particular active course from my calendar. However, this does not seem to effect the ics export of the calendar. So for instance if I use Google Calendar or Outlook *ALL* my courses will still show. I even opened up the exported ics file with a generic text editor and found that the course I unchecked was still there. Is there another way around this with exporting your canvas calendar and unchecking or removing a particular course from it?

I don't believe there is a simple way around the issue. The iCal export is per user, not course. Perhaps someone else might know how to hack an iCal feed.
From: How do I view the Calendar iCal feed to subscribe. "The calendar feed will contain events and assignments from all of your Canvas calendars."
