Are students able to share their screens in Canvas Conferencing?
Also is there a way to hide or turn off shared notes?

You can promote any user to be a presenter or moderator, as show in the Manage Users step of this lesson: How do I use the Conferences interface as a moderator or presenter? Being a presenter or moderator allows users to share their screens.
According to Use shared notes – Blindside Networks Customer Support Portal, shared notes are available to all users in the meeting.

I did discover this after posting my question:
When you go into the “Lock Users” settings under the list of names, there is a Edit Shared Notes option to lock. I would think if you lock it then students cannot edit them as well.
