undo highlighting in speed grader?

Good afternoon,  @m_m  Thank You for posting your question.  If you are asking about how to remove annotations that you've made on a student's document via the SpeedGrader, there should be a trashcan icon you can click on that would delete the annotation.  Check out the screen shots and directions in this Guide: How do I add annotated comments in student submissions using DocViewer in SpeedGrader?
