frankel - yep, they can submit, but it doesn't mean you have to grade it. 😉
What most of our faculty do is have something in their syllabus and on the assignment directions stating their late work policy - ex: only accepting work 1 week past due date or not accepting any late work. From speedgrader it will be marked as late and you can see the day/time the assignment was turned in; in the gradebook it will be marked in light red (pink) to tell that it was submitted late.
The only other thing I can think of is if you copied and pasted the directions and re-posted them somewhere for the students to look through. Slightly tedious for you, but if you don't want the students to upload assignments late then that's about all I can think of. Sorry!
