As a Parent / Observer are we able to see the assignments/work that our child has completed and submitted?

From the Grades page in any course, you'll be able to see the assignment list and actually open up submissions from your student! You'll also see grades and feedback from the teachers. How do I view my grades in a current course?
The Canvas Parent app gives you an at-a-glance version of this, but you won't be able to see the assignment or rubric details.

Why is it that parents can not see what their child turned in on Canvas? This is eliminating our ability to help our child going forward. If the assignments were submitted on paper, and we see the paper assignments come home, we can discuss with our kids. Why are we blocked from seeing the assignments submitted? This is also making grades seem somewhat mysterious to parents as well.
When an assignment is submitted by a student, is it automatically marked as "submitted" from the Canvas Parent app? Wondering if we will ever see "not submitted" when in fact, the student did submit already? Does the teacher have to receive the assignment before it shows up as submitted on the Parent/observer end?
