Sounds like you want to give an extension to a particular student. If you want to give one student a different time/date to complete a Canvas assignment, then that is referred to as a differentiated assignment. This link should be helpful:

Alternatively, if you want a student to have extra time to complete a quiz (ie they get 60 minutes to complete a test versus the rest of the class whom gets 30 minutes); this link would be helpful:
