Downloading student submissions from a Quiz -- or, how to make the "Quiz" an "Assignment" so submissions can be downloaded

I could use help with this! For my AP Courses, I am using Canvas Quizzes to mimic the platform of Bluebook and AP Classroom for timed essays. However, I want to be able to download the student submissions and print, like I can for Canvas Assignments. Just cannot figure it out...thanks for any guidance and/or steps.

If it is an essay question, how about using the "Student Analysis" and downloading it as a CSV file?
