I can't even see my 7th grader's info anywhere - not in courses, on the dashboard, in the calendar, etc. - so this isn't a case of just not seeing where I toggle. I don't think my 7th grader's account is tied to mine at all. Who should I contact about checking on this and getting his account linked to mine? Thank you!

Welcome to the Canvas Community! While I am not certain of Boyce's process of creating Observer accounts, there's a good chance that you'll be able to connect your account to your 7th grader's.
First, have your 7th grader create a pairing code.
Then, open your account. Click Account (the silhouette or profile photo) then Settings. Next, look for Observing. You should see your 5th grader's name listed. There will be a place for you to add the additional pairing code. (How do I link a student to my user account as an observer?)
On your dashboard, you may see a lot of course cards. You can always nickname, color code, and drag-and-drop to organize your cards by student. I've included more details in a blog: Clarity for Canvas Observers, and I hope you find it helpful!
With multiple students being observed by the same account, I recommend trying Canvas Parent. It's a free app which provides at-a-glance views of each student's week and assignments...separately. It's very well-organized.
