Missing Quizzes Need Manual Grading After Term Ends

My class has 4 Units, and each unit has 4 quizzes (Classic Quizzes) available to students - they just pick one of the four to submit for a grade (I drop the three lowest scores). Many students open each quiz to see which one they want to do. That means many students have unsubmitted quizzes for each unit. After the due date passes, the quiz automatically gets submitted and the students get 0 for each quiz they didn't do. This is how it's supposed to work and it's fine throughout the semester.

The problem comes at term end. When the term ends, for some reason, these quizzes seem to get re-submitted and need grading. The other problem is that I can't just put 0 in the gradebook - Canvas requires me to manually open each quiz and enter 0 for each essay-type question. These quizzes had a 0 all semester until the term ended! Why don't they just keep the 0??

All semester, I've had the setting "Automatically apply grade for missing submissions: 0%" for my gradebook, hence why the quiz gets a 0 when the student doesn't complete it by the due date. These quizzes all allow multiple attempts, but I just changed one of them to not allow multiple attempts, and it didn't affect anything.

I tried "Set Default Grade" to 0 without checking the "Overwrite already-entered grades", but that doesn't work.

What am I doing wrong? This is a serious headache at the end of the semester! I can't just ignore it because I drop the three lowest scores, and nothing can be dropped unless all four assignments have a grade. Right now I have ~70 of these quizzes I need to go in and manually enter 0 to EACH QUESTION! 

Hope this all makes sense. Anyone else ever have this issue?? HELP!
