Teachers need to be able to enable or disable assignments to sync to their gradebooks while in the Canvas gradebook.  This feature should be included in the three dots that open the drop down menu next to each assignment's name at along the top of the gradebook

@dtodor By "sync to their gradebooks," are you referencing a sync to an external SIS: something like this? Single Assignment Syncing - Canvas Community

If I'm understanding the wording correctly, we have received a similar request. This includes having several assignments, however not wanting all of those assignments to be visible in the Gradebook, for the sake of storing them, comparing them to others, etc. which overpopulates the Gradebook. So to get rid of the un-needed assignments in the Gradebook, a simple disable from the Assignment in the Gradebook three dots would seem to fix the issue, since all assignments currently automatically populate the Gradebook. Adding onto the request, once the assignment is gone, it would be helpful to have an area to add it back, just in case it's disabled by accident. In this case, an item could be added underneath the View option and further under the Column heading the view only Disabled Assignments. Here, the three dots within each assignment could have the enable option.
