When i go to Studio and try to create a quiz with a video I do not see the option create a quiz on my uploaded videos?

The quizzing portion of Canvas Studio is a permission that needs to be enabled by your school's Canvas administrator.  I'd recommend having a conversation with your Canvas admin or your school's Online Learning / eLearning / Distance Education team to see if they would be willing to turn this on for you and the other instructors at your school.  (It can actually be enabled for students, too.)  Here is a Guide you'll want to show your Canvas administrator:
