Hi @elizabeth-gaile Welcome to the Canvas Community. Students should not be seeing 0% on each, individual assignment not submitted (or graded) yet. They should be seeing just a dash in their view of Grades for published assignments. The same applies to the default Assignments group (and any other assignment groups), which should be showing N/A. I assume that you're referring to the big 0 at the bottom of the GRADES page, as the arrow is pointing to, below:
In the case of the Total score, that can be disabled, as outlined here: How do I hide totals in my students' grade summaries? The end result after doing so will be something like this instead:
Bear in mind that the assignment groups will still display (the Assignments at the bottom of both screen captures.)
If, in fact, students are really seeing scores of 0% for each assignment, that should simply not be occurring for non-graded assignments. Are YOU seeing scores of 0% in the gradebook for these assignments, as well, rather than the default dash for non-graded assignments? If so, it's possible someone set the default score for every assignment to be 0 (see How do I set a default grade for an assignment in the Gradebook? for how to do that), but that seems pretty unlikely unless you have TAs and other instructors who might have done that.
You may need to reach out to Canvas support if this is occurring, however. Unscored assignments (again....) should just be seen as a dash by both students and faculty alike.
