I like to respond in the discussion to student discussion posts as they come in during the week. With the new discussion format, how can I see who I already responded to and who I didn't without clicking on
"Reply" for each student to see if one of the replies is my own?

Hello @MSpelleri ,
I understand that you would like to be able to see who you have/have not responded to in the discussions redesign, without having to expand the replies. Unfortunately this is not a possibility at this time.
I can provide two workarounds that may lessen your need to expand the replies, however, they won't do away with expanding the replies altogether.
1. Enable the "Discussions - New Reply" notification type, which will notify you each time there is a new reply in a discussion topic that you are subscribed to.
2. Filter the discussion topic by all replies or unread replies.
