How to I now add a score graded assignment to an assignment

If you mean you have an assignment in Canvas and it is turned in on paper which you have graded?

If so, just go to the grade book and go to the column for that assignment, click on an entry for a student and enter their grade.  You can use the down arrow key to go to the next student.

If that is not what you meant, please provide  more information on what you are trying to do.
