Use the Rich Content Editor (RCE) and change from Paragraph style to a Heading Style. I don't know whether you're a student or instructor, so I'll link to the lessons in the Canvas Student Guide, but they are essentially the same for an instructor. There are currently two versions of the Rich Content Editor and I don't know which you're using, so I'll link to both.

The RCE only allows you to select Headings 2-4. Heading 1 is reserved for the title of the page for accessibility purposes and if you're using heading 5 or heading 6, you really need to refactor the page or rethink the organization. If that's not possible, you can use the HTML editor to insert those levels manually. Here are lessons on how to use the HTML editor.
