Is there any way I can enrol students to a course without having to use their email address. For example sending them a link to the course?

Yes, possibly but it depends a little on how your admins have your instance of Canvas set up.  Take a look at the linked guide to see how to do it.  If the option isn't available it means your admins have turned off this function.
