• How can  answers in a quiz can be annotated? As in highlight correct answer, strike through incorrect, insert comment etc. => i.e. NOT the generic comment box,

Hello there, @rpapoula ...

Unfortunately, when grading quizzes via the SpeedGrader, the annotations tools that you are used to seeing for regular assignments do not exist for quizzes.  So, you will not be able to highlight, cross out, circle, etc. answers on a student's quiz in this way.
