Can I change quiz scores grades from "latest" to "highest" after they have been submitted?

Deadline is past. Quizzes are complete. Looks like some issues with incomplete latest submissions. So I would like to just use "highest". Can I do this after the fact?

You can change the setting, but before doing that I would hide grades from the three dot menu in the grade book to avoid confusion and multiple notifications to students.  You might have to regrade to get it to take effect.  https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-regrade-an-assessment-question-in-New-Q... Or you can temporarily add fudge points for the same effect.
