I've created an essay quiz where all the answers are of type "essay."  Can I download all of the student answers so that I can grade them offline?

Glenn,

Yes, but it's not the prettiest.  Go to the quiz and click on Quiz Statistics.  From here click the Student Analysis button.  This will generate and then download individual responses to each question for each student.  When opened in Excel you'll be able to view the responses with a little bit of changing cell sizes.

If you've ever done a mail merge it's also possible to do that and create something a little more readable.
