How do I view .pages files in SpeedGrader submitted by my students?

Hi,  @akass . ".pages" files are in a proprietary format created by Apple and Canvas is not able to preview these documents as with other file types. You will want to instruct students to upload files in another format. You can restrict what file extensions students are able to submit in the assignment details.
