I would like to change the color of the menu bar in the course that I am teaching.

Hello  @gabyfahmy  Which menu bar do you mean?  The far left one is the Global Navigation menu and is set by your institution.  The menu one level over when you are in a course is just white unless your institution has put in some custom code to change it.
