How do I create a quiz where different answers allot different points ie if they choose A they get 5 points, B is 2 points and C is 1 point.

This kind of capability is not really available in current/classic Quizzes, but if your school has turned on New Quizzes within Canvas, this is possible.  Please check out this Guide: How do I create a Multiple Choice question in New Quizzes?.
