Why is the default setting for showing Due Dates in the notifications on WEEKLY? I didn't know you could change the settings until quite recently but there are still some people who will still see that their assignment is late A WEEK LATER, which is completely bad for a program that is usually used for education. The default setting for notifying due dates should definitely be either "notify right away" or "daily," because weekly makes it so you don't know the assignment is late, until it becomes void in most cases.

I am not sure why the default is set to "Weekly" for the "Due Date" notification.  But you are correct that this does seem to be the default...according to the linked PDF file in the blue box at the top of this Guide: How do I set my Canvas notification preferences as an instructor?.  You might want to post your question at the bottom of that Guide so that the Canvas Docs Team can address it.  Also, I might suggest that, if you feel this should be changed, you submit this as a Feature Idea here in the Community.  Here are some resources for you:
