The Instructure Community will enter a read-only state on November 22, 2025 as we prepare to migrate to our new Community platform in early December.

The answer is...possibly. 
Check out the instructions in Undeleting things in Canvas; this might allow you to successfully restore the assignment and all student participations along with it. If the remedies suggested there don't work, use the Report a Problem option on the Help menu to ask Canvas Support to attempt to retrieve it for you.
