How do you delete a closed quiz?  (My "Delete" option is grayed out.)

You typically do not want to ever delete content where students have submitted work, doing so will cause their grades to be deleted.

Does someone else create the content for you? If so, then you may not have permissions within Canvas to delete the quiz.
