Can I get notified by email when someone posts to a  particular discussion, e.g. course-related Q&A Discussion?

I think the Guide that Robbie had linked to has been separated into two different documents now because notification settings can be configured both at the user account level and for a specific course.  Here are the two Guides you'd want to look at:

• How do I manage notifications for a single course as an instructor?
• How do I manage my Canvas notification settings as an instructor?

Often times, if a link is broken here in the Community (because of when this site transitioned to a new platform in the Summer of 2020), you can usually find the correct link by looking at the URL of the broken link.  The title will sometimes show in the URL, and from there, you can use the search box to find the Guide, article, discussion topic, etc.
