How can I extend an assignment due date for a student with extenuating circumstances?

Open the assignment for editing. Scroll to the bottom "Assign" box and click +Add. In the "Assign to" box, enter the names of the students who are receiving extended due dates, enter the new due date, and click Save. The assignment now will show one due date for those students and the original due date for "Everyone else."

If you want to change the date for one student, or re-assign an assignment to a single student (like a make-up), we often refer to that as a differentiated assignment.

(just make sure once you enter the + and name for the new students, don't get rid of the "everyone else".
