I'm wondering if there is a way I can leave a course if I'm an instructional librarian in said course? I have more access and abilities to many things that the students don't, but I can't see anything that would allow me to leave.

This would largely depend on what access you have. Canvas allows the creation of custom roles which may or may not have the ability to do this. However, can you possibly try following this guide to remove your enrolment --> https://community.canvaslms.com/docs/DOC-12726-415241451 you may also try having another person who has the same access do this.
I have always had full admin access, so I am unsure whether you can remove yourself or not.
Please let me know how you get on with that, and if not you may need to speak to your school's Canvas Admin or Support Team who should be able to action this for you.

I guess that this depends on who will be left in the course. If you are in the course in a Canvas Teacher role then you can remove yourself. How do I remove an enrollment from a course? If that is the case then it will pay to ensure that another teacher is still in the course.
If you do not have a teacher role in the course then you could use the Inbox to send the teacher a message to ask to be removed. https://community.canvaslms.com/docs/DOC-10574-4212710325
