I'm using a discussion to give students practice asking and answering questions (I teach a world language class). I am sending students individual feedback on their posts, and would like them to be able to edit and update their posts when they get that feedback. Right now, my students are telling me that they see that the "edit" option is (disabled). That makes me think that somewhere I should be able to enable it. Is this so, or is the only path of recourse for the student to delete and repost?

I could point you to the Canvas guide for your answer, but it's much easier to show & tell you:
Settings > Course Details > Scroll down > More options
[ ] Let students edit or delete their own discussion posts
Bingo, there ya go!
