Hello  @richardson5800  Welcome to the Canvas Community.  Thank you for posting your question.  Gradebook columns are not created on your Grades screen.  In order to create a new column in Grades, you will need to go to your "Assignments", "Quizzes", or "Discussions" (if you're creating a graded discussion) index pages to create a corresponding graded assignment, graded quiz, or graded discussion topic.  Once you create that item and put the details in for that graded item, you will see it as a new column in your Grades page.

I trust that the reply explains how to do it.  Unfortunately, Canvas will also display a "junk number" alongside the letter grade.  According to https://canvashelp.stanford.edu/hc/en-us/articles/115001906247-How-can-I-give-students-a-letter-grad... ,

"Please note that although you can assign students letter grades, you will not be able to hide the total amount of "points" the students earned based on the letter grade received. The grading scheme will take the highest point value of the letter range. For example, if an A- is < 94.0% to 90.0%, entering an A- will result in a 93% because that's the next whole number that is less than 94%"

I doubt there is a workaround for this.

Sure it is.  The questioner wanted to enter a column of letter grades manually without interference or "help" from Canvas.  I shared a link that might be helpful.  It might be most helpful if the Assignment is worth 0 points, but I haven't tested that.

I find this quite limiting. Previously at my institution we used Blackboard. It was very clunky indeed, and not as good as Canvas overall. However, it did allow one to create bespoke columns in the Grade Centre. After exams I would give students a breakdown of their marks for particular sections, so they could see where they had done well, and where they hadn't. I am unable to do this in Canvas.
