How do you rename a folder? Why can't I just highlight the text on a folder and change the name?

When you see the folder on the right-hand side of the window, the folder should have some options. Those three dots will allow you to do a number of actions, including renaming.

The only option under the three dots is something called Canvas Favorites.  Now what?

I'm not familiar with any options in Canvas for "Canvas Favorites".  Can you please provide a screenshot of where you are seeing this?  The link that @KristinL had provided above does show you how to re-name a folder within Canvas.

How do I create a folder in Files as an instructor?

There are no three dots anywhere near the folder that is listed under the course name. One was created called "unfiled" and it is that that I want to rename.

Are you referring to when you go to your personal "Files" area ("Account" >> "Files")?  Then, within the "My Files" folder, are you asking about the "unfiled" folder?  If so, I was able to successfully re-name my own folder.  I clicked on "My Files" folder on the left side of my personal "Files" screen.  Then, on the right side of the screen, I scrolled down to my "unfiled" folder, and I was able to click on the three dots to the right of the green check-mark (published) icon.  I selected the option to "Rename" the folder, and it let me re-name it successfully.

Is this not happening for you?  If not, I would recommend reaching out to Canvas Support to get further help with this.
