I have experienced the same problem.
Contacting admin is not a great solution (or one at all) in my opinion.
A colleague of mine helped to find a solution for me that may also work for you.
In my situation, we have a Sandbox course to save assignments. I had a copy of the closed assignment in the unpublished Sandbox course. I was able to change the due date in the unpublished Sandbox course and then import to my current class.
I hope this can help you out.
This behavior is in my opinion clearly indicative of 'buggy' software, where 'buggy' is a euphemism for poorly designed.
