How do I move multiple assignments within a module or into another module?  How do I delete multiple assignments within a module?

Notice that the second link I provided uses the word "remove" instead of "delete".  This is because your "Modules" page is where you build out the structure of your course...using content from your "Assignments", "Pages", "Discussions", and "Quizzes" index pages.  If you "remove" an item from a module on your "Modules" page, it still exists on your associated index page.  However, if you first "delete" the item from your index page (assuming it is also already in a module), it will also "delete" it from your "Modules" page.  (Example: How do I delete an assignment? ... the process is similar for your other index pages.)

So, @Chris_Hofer each item must be moved individually? There is no way to select multiple items and move them?

That's correct.  I've never been able to move multiple items from one module to another at one time.  I just did a quick search for Feature Ideas here in the Community, and I found the following which you might want to give a star rating to and add your own feedback:
