I am a high school teacher using Canvas for the first time. Are muted assignments calculated?  in the grade totals? If so, is there a way I can prevent that grade from counting until after I'm done grading all assignments?

When you have hidden the grade it is not counted in the total that students see, but it does show up in the total that you see.  Students will not see the change in their course total until you post the grades for that assignment
