Is it possible to open a quiz for a single student, a quiz that all others students have already completed and is now closed to the class, who needs to make-up the missed task?

Basically, in the assign field- you'll click on the plus, add the student, add the open/until/due dates and then save. Just make sure not to remove the "everyone/everyone else" assignment.
