I want to hide or delete some items from the parents' view. How can I do this ? 

and is it possible to hide "view grades" on the dashboard from all the school account as we don't have grades,

Hi Sherihan -

The Observer can see what the student sees. They just cannot interact with the course or submit content. Unfortunately, there is not a way to hide certain assignments/activities from Observers.

To remove the "View Grades" button for all users, you'll have to work with your site admin (if you're not that person) to work with CSS in the Theme Editor. (https://community.canvaslms.com/message/142022-re-hide-view-grades-button-on-dashboard )
