How do I keep track of the students who have completed their Peer reviews, and how do I keep track of who has not peer reviews completed on their work?

Hi  @jahlenius  Welcome to the Canvas Community.  Check under the View Assigned Peer Reviews heading in this online lesson:  https://community.canvaslms.com/docs/DOC-12827-415254250  (Even if you automatically assigned peer reviews, the information is in the same place.)  You'll see green checkmarks next to names of peer reviews that have been completed.

see which essay did not get reviewed.
